Ingredients

  • 1 baguette (small)
  • 3 cups baby arugula
  • 8 slices ham (lean)
  • 2 1/2 ounces grilled peppers
  • 4 slices cheese (halved)
  • 1 ounce tomatoes (meaty, patted dry)

Directions

  1. Halve baguette horizontally. Remove some of the soft center, leaving a hollow bread case.
  2. Layer arugula, ham, peppers, cheese and tomatoes into bread cavity until full. Replace top.
  3. Wrap baguette firmly in foil or plastic wrap, securing with string. Chill for 3 hours or until required. Cut in half before serving.
