Four ingredients for the dough plus three for the filling equals a supremely easy dessert that makes the most of a surplus of peak of season strawberries -- and an excellent reason to visit a U pick farm. The dough comes together quickly and is baked until golden before topping with a mergingue that has those berries folded in. A quick return to the oven to brown the meringue is all that's left before delving in.
- 125 grams butter
- 3 egg yolks
- 20 grams sugar
- 210 grams flour
- 500 grams strawberries
- 3 egg whites
- 3 tablespoons sugar
- Preheat oven to 180 degrees Celsius:
- Dough Preparation:
- Melt the butter in the microwave, and mix in the remaining ingredients. Line a pie pan with parchment paper, and strech the dough in the pan, cut off the excess at the edge. Bake until golden.
- While the dough is in the oven, prepare the filling. Filling Preparation:
- Wash the strawberries and cut them into small pieces. Whisk the egg whites to stiff peaks, add the sugar and keep whisking until it becomes meringue. With a clean cloth, dry off the strawberries, and mix them in the meringue. Remove the dough from the oven, add the filling, and bake until the meringue browns.
