Strawberry Tart


Four ingredients for the dough plus three for the filling equals a supremely easy dessert that makes the most of a surplus of peak of season strawberries -- and an excellent reason to visit a U pick farm. The dough comes together quickly and is baked until golden before topping with a mergingue that has those berries folded in. A quick return to the oven to brown the meringue is all that's left before delving in.


125 grams butter
3 egg yolks
20 grams sugar
210 grams flour
500 grams strawberries
3 egg whites
3 tablespoons sugar


1Preheat oven to 180 degrees Celsius:
2Dough Preparation:
3Melt the butter in the microwave, and mix in the remaining ingredients. Line a pie pan with parchment paper, and strech the dough in the pan, cut off the excess at the edge. Bake until golden.
4While the dough is in the oven, prepare the filling. Filling Preparation:
5Wash the strawberries and cut them into small pieces. Whisk the egg whites to stiff peaks, add the sugar and keep whisking until it becomes meringue. With a clean cloth, dry off the strawberries, and mix them in the meringue. Remove the dough from the oven, add the filling, and bake until the meringue browns.
