Strawberry Swirl Mascarpone Ice Cream

Ingredients

  • 1 pound strawberries (hulled and chopped)
  • 1/3 cup powdered sugar (+ 1 1/2 tbsp)
  • 2 tablespoons lemon juice
  • 1/2 pound mascarpone cheese
  • 3/4 cup heavy cream (whipped to stiff peaks)

Directions

  1. Place the strawberries, 1/3 cup powdered sugar and the lemon juice in a blender and purée until smooth. Set aside 2 oz of purée for the swirl.
  2. Beat the mascarpone (or whipped cream cheese, if using) and 1 1/2 tbsp powdered sugar for 5-6 mins. Stir in the strawberry purée then continue to beat for 2-3 mins. Fold in the whipped cream. Transfer to a suitable container and freeze for 30-40 mins. Swirl in the reserved strawberry purée then freeze for at least another 4-6 hours, or overnight, if possible.
