Salads are perfect for lunch and dinner. They also are great side dishes and starters to any meal. This Strawberry Salad with Balsamic Vinegar provides crunch, sweetness and savory tartness all in one dish. It takes about 25 minutes to prepare so it is perfect for a weeknight or an office lunch. It has 240 calories too, so it isn’t hard on the waistline. If you want a fresh and aromatic salad, then this will please the palate.

Ingredients

  • 10 strawberries (disinfected and thinly sliced)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • salt
  • ground black pepper
  • 3 cups lettuce (assorted, in bite-sized pieces)
  • goat cheese (optional)

Directions

  1. Place the strawberries in a bowl and dress with the vinegar. Stir and let them rest for 15 minutes in the refrigerator.
  2. Drain the strawberries and set aside, keeping the vinegar.
  3. Add the olive oil and salt and pepper to taste to the vinegar. Mix until it emulsifies.
  4. Place the lettuce in a salad bowl and pour the dressing over it, mixing carefully.
  5. Add the strawberries, and goat cheese if desired.

This is a simple recipe that is very flavorful. I use both goat cheese and feta for a topping, all of which go nice with the berries. Try some blueberries mixed in too for enhanced flavor combinations. I left out the pepper as fruit just doesn't taste right being peppered to me.
