This Strawberry Salad with Balsamic Vinegar provides crunch, sweetness and savory tartness all in one dish. It takes about 25 minutes to prepare so it is perfect for a weeknight or an office lunch. Ingredients

  • 10 strawberries (disinfected and thinly sliced)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • salt
  • ground black pepper
  • 3 cups lettuce (assorted, in bite-sized pieces)
  • goat cheese (optional)

Directions

  1. 1Place the strawberries in a bowl and dress with the vinegar. Stir and let them rest for 15 minutes in the refrigerator.
  2. 2Drain the strawberries and set aside, keeping the vinegar.
  3. 3Add the olive oil and salt and pepper to taste to the vinegar. Mix until it emulsifies.
  4. 4Place the lettuce in a salad bowl and pour the dressing over it, mixing carefully.
  5. 5Add the strawberries, and goat cheese if desired.
