Strawberry Raspberry Mozzarella and  Parmesan Salad

Description

Fruit salad without the cream. You’ll experience a mix of sweet, natural fruit and the biting strength of balsamic vinegar. Mozzarella adds a smooth, calming taste. Serve this up the next time you want something a little different.

Ingredients

  • 250 grams strawberries
  • 250 grams raspberries
  • 1 buffalo mozzarella (large ball)
  • 1 piece parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 30 grams pinenuts
  • basil leaves

Directions

  1. 1On each plate, cut strawberries in 2 or 4 pieces, depending on size.
  2. 2Add mozzarella and raspberries.
  3. 3Brown the pine nuts in a skillet for 3 to 4 minutes, watch carefully.
  4. 4Add them to the plates. Make a vinaigrette by mixing the vinegar, salt, and olive oil.
  5. 5Pour a little on each plate.
  6. 6Use a vegetable peeler to make Parmesan shavings, and spread them around the plate.
  7. 7Garnish with pine nuts and basil.
  8. 8Serve with toasted whole bread.
