  • 1/2 cup coconut milk (well-shaken)
  • 1 cup frozen strawberries
  • 1/2 cup red beet (peeled, cubed and cooked, chilled)
  • 1/2 cup fresh orange juice
  • 1 teaspoon honey (optional)
  • 6 ice cubes

    Directions

    1. In order, combine coconut milk, strawberries, beet, orange juice, honey (if desired) and ice in blender jar of KitchenAid® Pro Line® Blender. Secure lid and set blender to Smoothie setting. Blend until machine turns itself off.
    2. Alternatively, combine ingredients in blender as directed, secure lid and turn dial to Speed 1. Slowly increase speed to high (Speed 10 or 11). Blend until completely smooth, about 1 minute. If necessary, scrape down sides of jar with Flex Edge tamper.
    3. Smoothie is best if served right away.
    4. Chef’s Tip: To cook beets on your own, peel and cube a beet and boil until tender, then drain and refrigerate until well chilled before using. Precooked red beets can also be located in the salad section of your supermarket.
