Description

There is nothing like fresh strawberries in the heat of summer. Their flavor is so sweet and fragrant, making them a great base for this simple mousse. Just five ingredients bring this delicious and seasonal dessert. Vibrant crushed green pistachios are the perfect topping for the mousse, their contrasting color makes for a visually stunning dish.

Ingredients

  • double cream (40 cl.)
  • 500 grams strawberries
  • 5 sheets gelatin
  • 6 tablespoons powdered sugar
  • crushed pistachio

Directions

  1. Place the cream in the refrigerator.
  2. Remove strawberry stems and leaves.
  3. Mash the strawberries into fine puree. Spoon the puree through a sieve to remove the seeds.
  4. Place gelatin sheets in a bowl of cold water to soften.
  5. Squeeze the gelatin with your hands to drain and melt with tablespoon of strawberry puree and the sugar in a saucepan over low heat. Cool and add to remaining strawberry puree.
  6. Whisk the very cold cream using an electric mixer until stiff.
  7. Mix 1/4 of the whipped cream with strawberry puree, then add the rest with a spatula, mixing gently.
  8. Pour into individual cups and cool for at least 3 hours.
  9. Garnish with crushed pistachios.
