When you’re tired of your ordinary salad, this one will liven up your day. Red, juicy strawberries. Green, crisp salad greens. Thick slices of halloumi cheese. Complimented by mint and basil leaves. This salad will deliver a perfect mixture of sweet and tart and will give you the energy you need for your day.

Ingredients

  • 300 grams strawberries
  • 8 slices halloumi cheese
  • 1 cup mixed greens
  • 15 fresh mint leaves
  • 15 basil leaves
  • balsamic vinegar
  • 2 tablespoons olive oil
  • 1 lemon juice

Directions

  1. Cut the strawberries in 4 pieces, put them in a bowl, sprinkle with 2 tablespoons of balsamic vinegar, half the lemon juice, and 3 tablespoons of olive oil.
  2. Season with salt and pepper.
  3. Add the fresh mint and basil.
  4. In a frying pan, brown the halloumi in olive oil until golden.
  5. Add the lettuce to the strawberry mixture, mix gently.
  6. Check seasoning, add oil or vinegar if necessary.
  7. In each plate, lay 2 slices of halloumi, then add the strawberry and salad mixture.
  8. Serve with a slice of toasted bread.

One of the most remarkable salad recipes I have endured. The strawberries were fresh from the market and had so much juiciness to them. The halloumi cheese was delicious and added that cheesy greatness every salad needs.
