Give your soup a makeover with this bold recipe. The vibrant red is a perfect complement to a green salad. It hints at sweetness, while not masking the traditional tomato and bell pepper flavor of this Italian classic. Garnish with sliced strawberries or sprigs of parsley.

Ingredients

  • 500 grams strawberries (cored)
  • 500 grams tomatoes (cored)
  • 50 grams red bell pepper (seeded)
  • 1 clove garlic (peeled)
  • 1 tablespoon wine vinegar
  • 50 milliliters olive oil

Directions

  1. Add the strawberries, tomatoes, bell pepper, garlic, vinegar, and oil to a blender. Puree until smooth. Puree in batches, if needed.
  2. Season and add more vinegar or oil to taste.
  3. Strain the gazpacho to obtain a smoother texture.
  4. Refrigerate, serve cold and garnish with strawberry slices.

When I made this recipe it truly was a different gazpacho recipe that I had never had the pleasure of making before. The strawberry really gave it the sweetness that I desired and didn't mask any of the other flavors. A award winning 4 star recipe I can make any day of the week.
