Strawberry Cream Fudge

Ingredients

  • 13 1/2 ounces sweetened condensed milk
  • 1/4 cup milk
  • 1 1/2 cups brown sugar
  • 1/2 cup butter (chopped)
  • 2 tablespoons glucose syrup (or light corn syrup)
  • 9 ounces white chocolate (chopped)
  • 20 strawberries (and cream" gummy candies, finely chopped)

Directions

  1. Grease and line an 8 inch square cake pan with parchment paper. Combine condensed milk, milk, sugar, butter and glucose syrup in a heavy-bottomed saucepan over low heat. Cook for 3 mins, or until sugar dissolves. Simmer for 12 mins, stirring constantly, or until slightly thickened. Remove from heat. Add 7 oz chocolate and stir until melted and smooth. Whip for 5 mins, or until thick. Add candies then transfer to prepared pan and level surface. Set aside.
  2. Melt remaining white chocolate then transfer to a piping bag. Cut fudge into 1 inch squares and drizzle with white chocolate. Let set at room temperature for 1 hour, or until set. Serve.
