Description
This quick quiche gets Italian flavors from the stracchino cheese, jarred artichoke hearts, diced pancetta, and grated parmesan in the egg filling. If you can't find stracchino, you can use another type of creamy cheese such as fresh mozzarella, ricotta, or mascarpone. Store-bought puff pastry is a convenient shortcut to making the usual pie dough from scratch, and it becomes wonderfully light and flaky after baking. Serve warm, topped with more cheese if desired.

- 1 sheet pastry dough (puff)
- 250 grams cheese (stracchino, or ricotta, mascarpone)
- 1 egg
- 50 grams bacon (pancetta, cut into cubes)
- 6 artichokes (in oil)
- 4 Tbsp. Parmesan cheese (grated)
- 2 slices cheese (emmental, cut in strips)

Directions
- Preheat the oven to 190C
- Roll out the dough and place it in a pie plate.
- In a bowl, combine the stracchino cheese with the egg, add the bacon cubes, the sliced artichokes, and the parmesan.
- Add the mixture to the pie crust, add the emmental slices and sprinkle with breadcrumbs.
- Fold over the edges of the puff pastry and bake the quiche for 20 to 25 minutes until golden.
