All that is required for cooking these loin chops is a skillet with a lid and a stove top. These lean pork loin chops are low in fat and remain tender throughout the cooking process in a white wine mustard sauce.

Ingredients

  • 6 loin chops
  • 2 tablespoons olive oil
  • 3 garlic cloves (chopped)
  • 1 onion (thinly sliced)
  • 1/2 red pepper (small, strips)
  • 2 tablespoons mustard
  • 1/2 glass white wine
  • salt (to taste)

Directions

  1. In a skillet, heat the olive oil, and cover for 2 to 3 minutes. Uncover, turn over the chops, and simmer for 2 minutes or more.
  2. Sprinkle on top, the garlic, onion, and pepper.
  3. Season with salt, and add the mustard, spreading over the onion.
  4. Cover, and cook on low heat.
  5. After about 10 minutes, mix every thing well, and sprinkle with white wine.
  6. Simmer uncovered another 2 or 3 minutes.
  7. Serve with white rice.

I really like recipes that incorporate the stove top and have everything cooked together. It really gets the juices married together to create a unique flavor that's consistent throughout the dish. These chops really do serve well with rice. It's a quick dinner with little prep or clean up time required.
