Ingredients

  • 2 tablespoons vegetable oil
  • 10 1/2 ounces scallops (trimmed, halved horizontally)
  • 1 red onion (medium, sliced)
  • 1 clove garlic (minced)
  • 2/3 inch fresh ginger (sliced)
  • 1 red chili (long, finely sliced)
  • 1 bunch broccolini (sliced)
  • 1 bunch asparagus (trimmed and sliced)
  • 3 1/2 ounces snow peas (trimmed)
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar

Directions

  1. In a wok or large frying pan, heat 1 tbsp oil. Season scallops then sear for 30 seconds per side. Set aside. Add remaining oil and stir-fry onion, garlic, ginger and chili for 30 seconds, until fragrant. Add vegetables and stir-fry for 1 min. Add oyster sauce, soy sauce and sugar. Cook for 1-2 mins, until bubbling. Return scallops to pan and cook for 30 seconds to heat through.
