Ingredients

  • 14 ounces tofu (extra firm organic)
  • 2 tablespoons peanut oil (use more or less, depending on your pan)
  • 2 teaspoons minced garlic (finely)
  • 2 teaspoons ginger root (finely grated)
  • 1 cup scallions (sliced into 2 inch pieces, This is about 1 bunch green onions. Keep white parts separate from green parts. I used less than this, but only because I didn't have enough.)
  • 3 tablespoons chicken stock (or vegetable stock)
  • 1 1/2 tablespoons soy sauce (I used Tamari)
  • 1 teaspoon black sesame seeds (optional)

I had some leek which I sautéed for a few minutes before adding the tofu. Also Edamame which went in last. I used Pho broth and it added another layer of yum! This was quick and easy, my girls loved it!
