Ingredients

  • 1/4 cup peanut oil
  • 1 pound chicken thighs (trimmed, chopped)
  • 2 red onions (small, cut into thin wedges)
  • 2 cloves garlic (finely chopped)
  • 10 1/2 ounces broccoli (cut into small florets)
  • 1/3 cup oyster sauce
  • 1/4 cup sweet chili sauce
  • 16 ounces hokkien noodles (fresh thin, soaked in boiling water for 1 min, drained)
  • 3 1/2 ounces bean sprouts
  • 1/4 cup peanuts (toasted unsalted, chopped)

Directions

  1. Heat 1 tbsp oil in a wok over high heat. Stir-fry chicken, in batches, for 2-3 mins, or until just cooked. Set aside. Add remaining oil and stir-fry onions, garlic and broccoli for 2-3 mins, or until onion softens. Add oyster sauce, chili sauce, chicken and noodles and stir-fry until and heated through. Remove from heat and toss with bean sprouts. Season. Serve sprinkled with peanuts.
