Ingredients

  • 1 pound boneless pork loin (cut into julienne strips)
  • 4 tablespoons seasoning (Cajun-style)
  • 1 teaspoon vegetable oil
  • 1 red bell pepper (diced)
  • 1 green apple (tart, cored and diced)
  • 1/4 cup pecan (pieces)
  • 3 tablespoons paprika
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon garlic powder
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon nutmeg

Directions

  1. Season pork strips with 2 tablespoons Cajun seasoning. Toss remaining ingredients EXCEPT OIL with 2 tablespoons seasoning, reserve.
  2. Heat oil in nonstick skillet over medium-high heat. Stir-fry pork 2 minutes; add reserved mixture, cook and stir 2 minutes more. Serve immediately.
