- 400 grams glutinous rice (soaked in cold water for 1 hour)
- 1 Tbsp. peanut oil
- 15 grams ginger (finely grated)
- 2 cloves garlic (finely chopped)
- 4 chicken thigh fillets (skinless, cut into bite-sized pieces)
- 60 grams lap cheong (about 3, thinly sliced, see note)
- 20 grams dried prawns (soaked in hot water for 20 minutes, drained and coarsely chopped)
- 80 grams dried shiitake mushrooms (soaked in hot water for 20 minutes, drained, stalks trimmed and coarsely chopped)
- 2 Tbsp. Shaoxing wine
- 2 1/2 Tbsp. dark soy sauce
- 2 tsp. sesame oil
- 1 tsp. caster sugar
- 6 spring onions (thinly sliced)
- 4 eggs yolks (salted duck, only, coarsely crumbled, see note)
- ground white pepper (To taste: freshly)
- 2 Tbsp. grapeseed oil (each, and rice vinegar)
- 1 Tbsp. soy sauce
- 3 tsp. chilli flakes (dried)
- 1 tsp. sesame oil (each, and caster sugar)
