Sticky Date Puddings with Caramel Sauce

  • 1 1/3 cups pitted dates (finely chopped)
  • 1 teaspoon baking soda
  • 7 tablespoons butter (softened)
  • 3/4 cup brown sugar (packed)
  • 2 eggs
  • 1 1/2 cups self-rising flour (sifted)
  • whipped cream (or vanilla ice cream, to serve)
  • 1 cup brown sugar (packed)
  • 1 cup heavy cream
  • 14 tablespoons unsalted butter

Directions

  1. Preheat the oven to 325°F. Place the dates, 1 cup boiling water and baking soda in a medium bowl; stir to combine. Let stand for 5 mins.
  2. Beat butter and brown sugar in a large bowl with an electric mixer until pale. Add eggs, one at a time, beating well after each addition. Add flour and date mixture; beat until combined. Divide evenly among six 1-cup molds or ramekins. Place on a baking pan.
  3. Bake for 30 mins or until a toothpick inserted into center comes out clean.
  4. For the caramel sauce, place brown sugar, cream and butter in a medium saucepan on medium heat. Simmer for 5 mins, stirring. Serve puddings with whipped cream or ice cream and caramel sauce.
