Most of us associate snails as food with the classic French dish, escargot. However, this recipe for Stewed Snails puts a slight variation on the classic. The snails are cooked in a spicy chorizo sausage tomato sauce boasting spices like cumin, cilantro, and plenty of pepper for a spicy dish you can’t say no to. We recommend serving these Stewed Snails with plenty of bread to dip in the extra sauce. Total preparation and cook time is 70 minutes.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 garlic cloves (peeled and minced)
  • 1 onion (peeled and chopped)
  • 1 chorizo sausage (chopped)
  • 2 tablespoons flour
  • 4 tomatoes (peeled and seeded)
  • 1.5 liters broth
  • ground cumin
  • cilantro (dried)
  • ground black pepper
  • ground cayenne pepper
  • salt
  • 1 kilogram snails

Directions

  1. Add the oil to a skillet on medium heat. Add the garlic and onion and saute for about 5 minutes.
  2. Add the chorizo and the flour and mix well. Cook for 5 minutes.
  3. Add the tomatoes reduce the heat to medium low. Simmer for about 15 minutes.
  4. Add the broth and simmer for 15 minutes. Season with a pinch each of cumin, cilantro, black pepper, cayenne pepper, and salt.
  5. Add the snails to the broth and cook for 20 to 25 minutes.

I have never been a big fan of snails; but, with my in-laws coming over I wanted to prepare something they would like. This recipe really opened my eyes to a whole new world of tasteful foods. The snails were cooked to pure perfect and I could see myself making this a few time a year. A real 5 star recipe.
