Ingredients include pumpkin, sliced onions, chopped garlic cloves, olive oil, salt, white wine or beer to taste, red beans, and eggs.

Ingredients

  • 400 grams pumpkin
  • 1 onion (sliced)
  • 3 garlic cloves (chopped)
  • olive oil (to taste)
  • salt (to taste)
  • white wine (or beer, to taste)
  • 1 can red beans
  • eggs

Directions

  1. Cut the pumpkin into small chips.
  2. Heat a small skillet with olive oil, add onion and garlic, and cook until onion is translucent.
  3. Add the pumpkin, and cover the skillet.
  4. After some time, drizzle with wine or beer, and season with salt.
  5. When the pumpkin gets very soft, add the beans, and cook a little longer.
  6. Add as many eggs as needed for the number of servings.
  7. Once the egg white whitens, remove from the heat, and serve.
