Stewed Apple and Rhubabrb in Almond Flavored Sugar


Sweet, savory apples are combined with bitter rhubarb in this fabulous compote. Not only does the sugar add sweetness to the dish but also melts and helps to caramelize the apples, extracting their natural tart flavors. To fully emulsify the flavors, almonds provide a hint of salt and plays off of the earthy tones of the rhubarb by adding a nutty component. It’s quick, simple, and takes 4 simple ingredients. 280 grams rhubarb
200 grams apples
50 grams sugar (almond flavored)


1Cut the fruit into small pieces.
2Put them in a saucepan.
3Heat gently and mix with a wooden spoon.
4Add sugar. Stir together.
