Ingredients

  • 1 teaspoon vegetable oil
  • 2 chayotes (medium-sized, cut in fine strips, can substitute summer squash)
  • 1/2 serrano peppers (finely chopped)
  • 1 tablespoon coriander (minced)
  • salt (as desired)

Directions

  1. Preheat a large cooking pot on high and add the vegetable oil.
  2. Add the chayotes and serrano pepper once the vegetable oil is hot. Let it cook for 2 minutes.
  3. Stir the chayotes occasionally and add salt. Let it cook for 6 minutes on low with the cooking pot lid on.
  4. Add the coriander and let it cook for 1 minute.
  5. Turn off the stove and serve it directly on plates as soon as its ready.
