Steak with Pepper Sauce and Herring Mashed Potatoes



  • 40 grams butter
  • 30 grams flour
  • 0.25 liters water
  • 2 teaspoons veal stock
  • 2 teaspoons veal stock
  • 1 bouillon cube
  • 3 steaks
  • potatoes
  • smoked herring
  • butter (to taste)
  • milk (to taste)
  • ground black pepper (to taste)
  • peppercorns (to taste)


  1. Prepare a roux with butter and flour.
  2. Add water and mix well.
  3. Add the veal stock or bouillon cube and pepper.
  4. Thicken over low heat while stirring.
  5. Cook the steaks and serve coated generously with sauce.
  6. Boil or steam the potatoes.
  7. Cut the herring fillets into pieces and stir.
  8. Once the potatoes are cooked, peel them and mash them to make a puree.
  9. Add the herring, a little of butter and milk to get the desired texture.
  10. Add pepper and mix.
