Squid in American Sauce has a slightly sweet, tangy flavor. The texture is soft and smooth. Served with parsley or another garnish, this appetizer offers a contrast of colors and the rich, earthy aroma of onion and garlic sauteed over low heat.

Ingredients

  • 1 onion (peeled and diced)
  • 2 garlic cloves (peeled and diced)
  • vegetable oil
  • 1 kilogram squid (cut into 4-cm. pieces)
  • cognac
  • 500 grams canned tomatoes
  • 1 banana pepper (diced)

Directions

  1. Saute together the onion and garlic in a little oil on low heat.
  2. Once softened, add the squid and simmer 10 minutes.
  3. Add the cognac and cook until the alcohol evaporates out.
  4. Then, add the tomatoes and banana pepper. Simmer another 10 minutes.

Not my favorite dish, but my husband loved it. He ate the whole thing himself. He loves squid and the spicy tomato sauce with it.
