  • 4 eggs (whisked)
  • 4 slices bacon (diced)
  • 6 cups rice (cooked leftover, do not use fresh rice–if you must, cook it an hour in advance and spread it onto a cookie sheet and place in the freezer for 20 minutes)
  • 1 red onion (small-medium, thinly sliced)
  • 8 cloves garlic (minced)
  • 2 tablespoons minced ginger
  • 4 roots (green garlic, they look like scallions, which you can sub in a pinch, cleaned and chopped, white and light green parts separated from dark green)
  • 4 shitake mushrooms (good handfuls, cleaned and stems removed, thinly sliced)
  • 4 leaves (good handfuls of komatsuna, stems removed and roughly chopped, can sub spinach)
  • 10 ounces frozen peas (or fresh equivalent)
  • 1 handful snow peas (if you can get them, it’s too early here so I just threw some frozen broccoli in)
  • 3 tablespoons soy sauce
  • 1 tablespoon dark sesame oil
  • 1 tablespoon honey
