Ingredients

  • 1/2 cup Hellmann’s or Best Foods Vegan Carefully Crafted Dressing and Sandwich Spread
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons parsley leaves (chopped fresh flat-leaf)
  • 2 teaspoons chopped garlic (finely)
  • 1 teaspoon grated lemon peel
  • 1 pound fresh asparagus (steamed, then cut into bite-size pieces)
  • 10 ounces frozen green peas (thawed and drained)

Directions

  1. Combine Hellmann’s® or Best Foods® Carefully Crafted Dressing and Sandwich Spread, lemon juice, mint, parsley, garlic and lemon peel in large bowl.
  2. Add asparagus and peas and toss to coat.

I disagree with the "too much mint" comment. I followed the recipe with the exceptions: I broiled the asparagus, because...Who eats raw asparagus?!. I made the dressing exactly, and tasted it...then threw in MORE mint, parsley and garlic. I like it, and might add grated parm and/ or a pinch of cayenne powder.

Mint was overpowering. Tasted like it was missing something. I ate it with crackers to help me finish the rest lol
