A light soup bursting with fresh vegetables and flavor. A quick cheap option for dinner when you are trying to keep it light. Gluten free.

Ingredients

  • water
  • 1 chicken breast
  • 1 zucchini (sliced)
  • 1 carrot (sliced)
  • fresh mushrooms (chopped)
  • frozen corn
  • 1 onion (chopped)
  • 1 leek (chopped)
  • 5 leaves savoy cabbage (chopped)
  • olive oil (to taste)
  • salt (to taste)

Directions

  1. Bring to a boil a large pot of water.
  2. Cut the chicken breast into strips.
  3. Add the chicken and vegetables to the boiling water, season with salt, and simmer until everything cooked.
  4. When ready, sprinkle with olive oil, and a few drops of soy sauce.

This soup tastes a little more flavorful with broth instead of water, but the water does keep it light and easy to make. This is bursting with veggies and is very nutritious and healthy. It's also perfect if you have a garden to get fresh veggies. A cheap option that can make a lot too.
