A quick sponge cake, the perfect accompaniment to fresh fruit and an easy dessert for company. Using a sponge cake mix as the base, this recipe adds its own flair with lemon zest and a whipped cream topping.

Ingredients

  • 2 tablespoons milk
  • 4 eggs
  • 1 lemon zest
  • 1 package cake mix (sponge, Snow White)
  • 200 milliliters cream
  • 4 tablespoons sugar
  • chocolate shavings

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a 24 centimeter round cake pan with margarine, and dust with flour. Set aside.
  3. In a bowl, add the milk, eggs, and lemon zest. Beat well.
  4. Add the cake mixture and beat until the batter is really soft, and making bubbles.
  5. Pour the mixture in the cake pan, and bake for about 30 minutes.
  6. Check the cooking, remove from oven, and unmold. Allow it to cool down completely.
  7. After the cake is cool, whisk the cream with the sugar until firm.
  8. Spread on the cake, and sprinkle with chocolate shavings.

This sponge cake recipe was so delicious! I cannot express in words how much I enjoyed making and eating this. I have already added it to my recipe book. I know I will be making it all the time now. It is the perfect amount of sweet with a hint of zesty. The best part is, it’s perfect for any occasion, especially those weekends I am at home with nothing to do. Comfort food to the max. Love it!
