  • turkey cutlets
  • salt
  • ground black pepper
  • lemon juice
  • 1 ricotta cheese (mild)
  • 1 bunch spinach
  • 1 garlic clove
  • olive oil (to taste)
  • spinach (Pesto, optional)
  • pitted dates
  • butter (to taste)


  1. Season the turkey cutlets with salt, pepper, and lemon juice.
  2. Heat a skillet with a little olive oil, and add garlic and spinach. Cook until spinach is slightly soft.
  3. Place the cutlets on a baking tray, and add a layer of spinach, crushed ricotta cheese, and the dates.
  4. Fold the cutlets to wrap the filling, and fasten with toothpicks. Brush with spinach pesto (optional).
  5. Roast the cutlets in the oven with a few pieces of butter until brown.
  6. Serve with carrot rice.

This made a great weeknight meal. After I filled the cutlets, I browned them in the pan I used to cook the spinach. Once they were nice and brown, I then brushed them with the pesto and finished cooking them in the oven. It was an easy extra step that gave the flavor a little boost.
