Ingredients

  • 1 bunch spinach (washed and cleaned)
  • 1 cup lettuce (washed and chopped)
  • 2 slices turkey bacon
  • 1/2 cup feta cheese (crumbled)
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (minced)
  • salt and ground black pepper

Directions

  1. 1Whisk together the olive oil, vinegar, oil, salt, and pepper.
  2. 2Fry the bacon in a skillet until crispy. Remove from the skillet and use a paper towel to blot off the excess grease.
  3. 3Heat the vinaigrette in the skillet until it begins to simmer. Set aside to cool.
  4. 4Place the spinach and lettuce in a salad bowl. Cut the bacon into pieces and add to the salad. Drizzle with vinaigrette and serve.
