This Spinach, Avocado, and Goat Cheese Sandwich recipe will do just that. Loaded with vegetables and nutrients that will keep you strong through the day, this recipe is one of our favorites. Ingredients

  • 8 slices bread
  • spinach leaves (washed and chopped, as much as needed)
  • 1/2 avocado
  • 150 grams goat cheese
  • 1/2 cup parsley (finely chopped)
  • 1/3 cup basil
  • 1/4 cup mixed nuts
  • 3 tablespoons olive oil

Directions

  1. Prepare a pesto sauce by blending the nuts, olive oil, basil, and parsley in a food processor. Set aside for later.
  2. Heat up a frying pan over low–medium heat.
  3. Add a layer of pesto sauce to each slice of bread.
  4. Place some spinach, avocado, and cheese on top of the pesto sauce and top with the other bread slice.
  5. Place each sandwich in a frying pan, lightly toast both sides, and serve.

I wanted to try a sandwich that was different than everything I have had in the past and decided to try out this recipe. With such an easy recipe and minimal time to create it it is definitely a recipe you cannot go wrong with. I will be trying out this recipe again and give it 4 stars.
