Ingredients

8 slices bread
spinach leaves (washed and chopped, as much as needed)
1/2 avocado
150 grams goat cheese
1/2 cup parsley (finely chopped)
1/3 cup basil
1/4 cup mixed nuts
3 tablespoons olive oil

Directions

1Prepare a pesto sauce by blending the nuts, olive oil, basil, and parsley in a food processor. Set aside for later.
2Heat up a frying pan over low–medium heat.
3Add a layer of pesto sauce to each slice of bread.
4Place some spinach, avocado, and cheese on top of the pesto sauce and top with the other bread slice.
5Place each sandwich in a frying pan, lightly toast both sides, and serve.
