Ingredients

  • 2 cups spinach (washed and chopped)
  • 2 strips bacon (chopped)
  • 2 tablespoons onion (minced)
  • 2 tablespoons red wine vinegar

Directions

  1. Place the spinach into a salad bowl.
  2. Heat a skillet on medium heat. Add the bacon and onion and cook until the bacon becomes browned and crunchy.
  3. Add the vinegar to the pan and mix everything together.

This is an excellent “wilted salad!” Bacon and vinegar is winning combination at our house! Be sure to serve it right after pouring on the hot dressing so the spinach does not get soggy.
