These Spinach and Cottage Cheese Tacos are not only healthy, with only 160 calories, they also are ready in about 30 minutes, so you can rest assured they will be ready in time for dinner. Make sure to pick up these ingredients the next time you go shopping so you can surprise your family with a Taco Tuesday twist.

Ingredients

  • 1 bunch spinach
  • 1/4 cup cottage cheese
  • 1/2 onion (diced)
  • 100 grams ground beef (cooked)
  • 1/2 tablespoon garlic powder (or 1 clove garlic, minced)
  • 1 pinch ground cumin
  • 3 drops sauce (maggi, may substitute soy sauce)
  • salt and ground black pepper
  • 2 tablespoons oil (or cooking spray)
  • tostadas (Purchased, or tortillas, crisped in the oven or on a skillet.)

Directions

  1. Saute the onion in the oil until transparent and add the spinach. Cover and let cook until reduced. Add the beef, let cook for 3 minutes and add the cottage cheese. Add the salt, garlic powder, soy sauce, cumin, and pepper and cook for 5 minutes more.
  2. Serve on tostadas.

These don't taste like regular tacos, but they sure are good. They sound really different, but they aren't bad. They are great to serve on a hot day.
