Ingredients

1/2 boneless skinless chicken breasts
1 1/2 cups spinach (washed and torn)
2 tablespoons corn kernels (cooked)
1 tomatoes (chopped)
1/4 avocado
2 tablespoons goat cheese
1/2 teaspoon dijon mustard
1 tablespoon rice vinegar
salt
ground black pepper
1 tablespoon olive oil

Directions

1Saute or grill the chicken in a pan on medium heat until it is done. Set aside and allow to cool for 5 minutes. Cut the chicken into cubes and add to a bowl.
2Add the spinach, corn, tomato, avocado, and cheese to a bowl and toss well.
3Add the mustard, vinegar, and a pinch of salt and black pepper to a small bowl and mix well. Slowly drizzle the oil into the bowl, whisking as you do,
4Arrange the salad on a plate, pour the dressing onto the salad, and serve.
