50 grams spinach (cooked and drained)
50 grams flour
2 eggs
1 pinch salt
1 onions
1 tablespoon sugar
1 pinch salt
oil (Extra virgin)
1 black sausage (rice)
cream (splash of)
1 pinch salt
50 grams piquillo peppers (optional)


1For the rolls, with a hand mixer, mix spinach, flour and eggs.
2Season with salt.
3Line a rectangular pan about 20x30 inches with parchment paper and pour spinach mixture in it.
4Bake at 180°C (approximately 350°F) for about 5-7 minutes.
5Remove from oven and roll the longest part. Let cool while rolled.
6For the sauce, dice the onion. Heat oil in a pan and caramelize onions.
7Season with salt and a tablespoon of sugar and let caramelize for over an hour over very low heat.
8Set aside.
9For the filling, peel and slice the sausage.
10In a frying pan, fry the red peppers and when they are almost done, add the sliced sausage.
11Let it cook and then add a splash of cream.
12Season with salt. Grind with an immersion blender and set aside.
13To assemble the roll, roll out dough and spread black sausage filling over the surface.
14Arrange caramelized onions on top and re-roll it.
15Divide the rolls in two to make individual servings.
16To serve, arrange on a plate with some roasted piquillo peppers, if desired.
