Make Popeye proud with these delectably savory spinach muffins. Getting your kids (or reluctant self) to eat their daily serving of vegetables has never been so delicious. Made with yogurt and cream cheese, these savory spinach muffins are creamy, moist, and oh so good. Lightly seasoned with garlic, these muffins make a great afternoon snack on the go or addition to the dinner table. These savory muffins are vegetarian friendly. Bake time is 25 minutes.

Ingredients

  • 2 eggs
  • 125 grams natural yogurt
  • 150 grams philadelphia cream cheese
  • 3 tablespoons olive oil
  • 200 grams all-purpose flour
  • 1 teaspoon garlic powder
  • salt (to taste)
  • 250 grams spinach leaves

Directions

  1. Preheat oven to 190 degrees Celsius.
  2. Start by beating the eggs with the yogurt, cream cheese, and olive oil.
  3. In a bowl, place the flour, garlic, and salt. Pour in the egg mixture, and stir well.
  4. Blanch the spinach leaves for 4 minutes.
  5. Drain, rinse under cold water, and drain again.
  6. Chop the spinach, and add to the batter.
  7. Stir, and if necessary rectify salt.
  8. Distribute the batter in cupcake forms, and bake for 25 minutes.

I loved these savory little muffins. They were perfect in place of bread for dinner and even better with some scrambled eggs at breakfast. I tucked a few in my freezer as I hope they will reheat well. I cannot wait to make these again. I've saved the recipe with a note to perhaps add some shredded cheese to the batter next time. I think that will make them even better.
