Ingredients

  • 10 ounces frozen chopped spinach
  • 1 cup cottage cheese (creamed)
  • 5 slices bacon (cooked, crumbled)
  • 2 tablespoons minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 slices mozzarella cheese
  • 8 crepes

Directions

  1. 1. Cook spinach according to package directions; drain thoroughly. Fold cottage cheese, bacon, onion, salt and pepper into spinach. Heat thoroughly. Heat oven to 325 degrees.
  2. 2. Place Mozzarella cheese slice on each crepe. Spoon spinach mixture onto center of crepes; roll.
  3. 3. Bake until cheese melts, about 5 minutes. Makes 4 main dish servings (2 crepes each).
