Spicy Cucumber Salad Recipe with Thai Basil and Sesame Seeds

Ingredients

- 3 cucumbers (medium, or 2 European cucumbers)
- 1 tablespoon salt (for salting cucumbers to remove water, Kosher salt is best for this)
- 1 tablespoon toasted sesame seeds
- 1 tablespoon soy sauce (I like Kikkoman brand)
- 3 tablespoons rice vinegar (not seasoned vinegar, which contains sugar)
- 1 tablespoon chili garlic paste (Thai, I use Dynasty Chili Garlic Paste, sold in the Asian Foods section of my grocery store, but any Asian type hot chile sauce will work)
- 1/2 teaspoon minced garlic (I used garlic puree from a jar)
- 1 tablespoon splenda (or Agave Nectar, or use sugar, might need a bit more)
- 3 tablespoons sesame oil (Asian)
- 1 tablespoon thai basil (finely chopped, I used my frozen Thai Basil; regular basil would work)

This is so so good! Don't worry about making too much dressing either because you will want to put it on everything! It really tastes great with the cucumbers, has awesome flavor, and is perfectly spicy! I used reg. basil and it was great.
