Ingredients

  • 1 tablespoon olive oil
  • 2 onions (medium, peeled, chopped)
  • 1 tablespoon Garam Masala
  • 8 ounces red lentils
  • 4 cups vegetable stock
  • 12 ounces tomatoes (roughly chopped)
  • cilantro leaves (fresh, . to garnish)
  • naan bread (warm, to serve)

Directions

  1. Heat olive oil in a large wok or frying pan. Sauté onions over medium-high heat, stirring occasionally, for 7-8 mins, until softened and starting to brown. Add garam masala and cook until fragrant. Add lentils and stir to coat in spices. Add 2 cups stock and bring to a boil, stirring. Reduce heat, cover and simmer for 8 mins. Add remaining stock and tomatoes. Cook, covered, for 15 mins. Uncover and cook for another 5 mins, until lentils are soft and liquid has reduced slightly.
  2. Garnish with fresh cilantro and serve with warm naan bread.
