  • 1 kilogram snapper fillets (or other firm white fish, skin on and cut into large pieces)
  • 2 tablespoons lime juice
  • 1.3 liters fish stock (or water, check gluten-free if required)
  • 3 lemongrass stalks (see method)
  • 6 kaffir lime leaves
  • 3 tomatoes (vine-ripened, cut into 6 pieces)
  • 2 teaspoons tamarind puree
  • 1 tablespoon palm sugar (or coconut sugar)
  • 350 grams sweet potato (peeled and diced into 2.5cm pieces)
  • 1/2 bunch Chinese broccoli (roughly chopped)

  • coriander leaves (fresh, to serve)
  • 2 teaspoons coriander seeds (toasted and crushed)
  • 2 shallots (roughly chopped)
  • 4 red chillies (long, deseeded and roughly chopped)
  • 1/2 chilli (deseeded and roughly chopped)
  • 2 lemongrass stalks (white part only roughly chopped)
  • 2 tablespoons galangal (finely grated)
  • 1 tablespoon fresh turmeric (chopped, or 1 tsp ground turmeric)
  • 2 tablespoons coriander root (chopped)
  • 3 teaspoons ginger (finely grated)
  • 1/2 teaspoon shrimp paste
