Love this recipe-I did not have Thai red curry sauce, so I used General Tso’s Asian Sauce! Delicious!!!

The ingredients in this recipe make for a great coconut broth. This was to be our meal for the night. I got busy adding, 1 small sweet potatoe, 1 small red potatoe, 1 small green pepper, 1 small carrot, 1 small zucchini and chicken tenders Served over ramen. My husband loved it. This is what I love about Yummly, it gives me a base for a recipe and then I get creative. My husband is not fond of curry so I left that out.

we added 6 tsp of the red curry paste for a lot of extra kick/flavor, doubled the soy sauce, added sesame oil, fish sauce and rice noodles :D

It was sooo good and I used fish sauce instead of soy sauce. And I also added Thai chilis because I love spicy! Def will make it again!!

I added 1/2 pound of boiled shredded chicken breast to the soup. Everything else stayed the same. I could have gotten by with a 1/4 pound but I wanted four Hearty servings for four adults. Excellent Soup

YUM. I did this with Udon noodles instead of mushrooms and it was fab. I'm prolly gonna double the ginger and put a bit more red curry paste to taste. I feeling this is gonna be a regular affair in my kitchen...thanks!
