Ingredients

  • 150 grams strawberries
  • 150 grams blueberries
  • 150 grams raspberries
  • 60 milliliters apple juice
  • 1 vanilla pods
  • 4 star anise
  • cinnamon
  • 2 grams agar
  • 1 tablespoon fructose

Directions

  1. 1Cut the fruit into small pieces.
  2. 2Arrange them by layers in glasses.
  3. 3Heat the apple juice.
  4. 4Add the vanilla bean, split in two, star anise, and 3 pinches (or less to taste) of cinnamon.
  5. 5Bring to a boil. Remove from heat, cover to let infuse for about 10 minutes.
  6. 6Scrape the inside of the vanilla pod, and remove the star anise.
  7. 7Add the agar-agar, fructose, and heat over high heat. Boil for about 30 seconds.
  8. 8Remove from heat and pour into glasses.
  9. 9Refrigerate for at least 2 hours before serving.
