Spicy Pork and Green Bean Stir Fry

  • 1 tablespoon malt vinegar
  • 1 tablespoon dark soy sauce
  • 1 teaspoon cornstarch
  • 2 tablespoons peanut oil
  • 1 pound green beans (cut into 3 inch pieces)
  • 2 cloves garlic (minced)
  • 1 green onion (chopped)
  • 1 tablespoon fresh ginger (grated)
  • 10 1/2 ounces ground pork
  • 1 teaspoon chili bean sauce
  • steamed rice (to serve, optional)

Directions

  1. Whisk together malt vinegar, soy sauce, cornstarch and 2 tbsp water. Set aside.
  2. Heat 1 tbsp oil in a wok over high heat. Stir-fry green beans for 3-4 mins, until lightly browned. Set aside. Add remaining oil. Sauté garlic, green onion and ginger for 1 min, until fragrant. Add ground pork and chili bean sauce. Cook for 2 mins, or until pork is cooked. Return beans to pan. Add sauce mixture and toss to combine.
  3. Serve with steamed rice, if desired.
