- 10 oz. penne (OR ziti OR other short tubular pasta)
- 1 cucumber (small, halved, seeded and thinly sliced)
- 2 carrots (peeled and grated)
- 4 green onions (chopped, all of the white part and some of the green)
- 1/2 cup peanut sauce
- 1 Tbsp. soy sauce (ginger flavored)
- 2 Tbsp. rice vinegar
- 1 Tbsp. sugar
- fresh cilantro (chopped)
- roasted peanuts (chopped)

Directions
- Cook noodles according to package directions, drain and place in large bowl; let cool slightly. Meanwhile, in small bowl, stir together peanut sauce, soy sauce, vinegar and sugar, stirring to dissolve sugar. Add cucumber, carrots and green onions to pasta; toss dressing with noodle mixture. Serve, or chill up to 4 hours. Stir again before serving. Garnish with cilantro and peanuts.
