Ingredients

  • 10 ounces penne (OR ziti OR other short tubular pasta)
  • 1 cucumber (small, halved, seeded and thinly sliced)
  • 2 carrots (peeled and grated)
  • 4 green onions (chopped, all of the white part and some of the green)
  • 1/2 cup peanut sauce
  • 1 tablespoon soy sauce (ginger flavored)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • fresh cilantro (chopped)
  • roasted peanuts (chopped)

Directions

  1. 1Cook noodles according to package directions, drain and place in large bowl; let cool slightly. Meanwhile, in small bowl, stir together peanut sauce, soy sauce, vinegar and sugar, stirring to dissolve sugar. Add cucumber, carrots and green onions to pasta; toss dressing with noodle mixture. Serve, or chill up to 4 hours. Stir again before serving. Garnish with cilantro and peanuts.
