- 900 grams chicken (medium pieces)
- 3 cups water
- 3 Tbsp. oil (Refined)
- 1 desiccated coconut (grated)
- 1/4 cup coriander leaves (chopped)
- 1 bay leaf
- 1/2 nutmeg
- 7 cloves
- 10 black peppercorns
- 1 inch cinnamon stick
- 1 tsp. cumin seeds
- 1 tsp. coriander seeds
- 1 tsp. chilli powder
- 1/2 tsp. turmeric powder
- 3 green chillies
- 6 garlic cloves
- 3/4 inch ginger
- 3 onions (chopped)
- 7 red chillies

Directions
- Dry roast bay leaf, nutmeg, cloves, dry red chillies, black peppercorns, cinnamon stick, cumin seeds, coriander seeds, red chilli powder and turmeric. Coarsely grind them.
- Grind green chilles, garlic cloves, 1 grated coconut and ginger into a paste.
- Heat oil in a wok, add onions and ground masala from Step 2.

I improvised it a bit but roasting dry coconut chips in step 1. I also added 3 strands of mace and 1 star aniseed that normally goes with Malvani cuisine.
