  • 2 tablespoons olive oil
  • 1 lime (large, juiced)
  • 1/4 cup cilantro (chopped)
  • 1/4 teaspoon salt
  • 1 pinch cayenne pepper
  • 1 tablespoon chili powder
  • 1 bag green cabbage (shredded)
  • 1/4 cup cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons cilantro (chopped)
  • 1 teaspoon celery seed
  • 1 pinch red pepper
  • 1 pinch cayenne pepper
  • 1 tablespoon olive oil
  • 4 wheat tortillas (large low fat)
  • 1 cup cheese (mexican light)
  • 1 cup pico de gallo (store purchased)
  • 4 tablespoons light sour cream

    Directions

    1. Combine olive oil, lime, chili powder, 1/4 cup cilantro, cayenne and salt in shallow dish. Coat Mahi Mahi with marinade and let sit for 15 minutes.
    2. Slaw
    3. Combine olive oil vinegar, sugar, cilantro, cayenne pepper and salt in a bowl. Toss with cabbage and let sit for 15 minutes.
    4. Using a stove top grill pan, grill Mahi Mahi until done.
    5. Warm tortillas and top with slaw, Mahi Mahi, pico de gallo and cheese.
