  • 1/2 cup carrot (diced and cooked a little)
  • 1/2 cup zucchini (chopped)
  • 3/4 cup corn kernels (cooked)
  • 1 Tbsp. all-purpose flour
  • 1/4 tsp. cumin powder
  • grated nutmeg (a generous pinch of freshly)
  • 1/3 cup cream cheese
  • 2 1/2 cups milk
  • 1/2 cup Parmesan cheese (finely grated)
  • 1 1/2 cups cheese (blend, Cheddar + Monterey Jack)
  • salt (to taste)
  • 1/8 cup garlic (+ Herb bread crumbs, optional)
  • 1 handful fresh cilantro (chopped)
