Delicious and quick prep. Doubled this recipe and it easily scaled up to feed 8 people. Fantastic!

Delicious! I used 3 limes and only 3 peppers and it created just the right balance. Will definitely make this one again!

This turned out ok, but it could have been more moist. Next time I will either use a smaller slow cooker or double the liquid.

Amazing and easy recipe! Add some mashed potatoes and garlic roasted carrots, and you've got the best meal all week. Will definitely make this again.

I will cut back on the chipotles next time around. The flavor is amazing, but I think they overpowered the lime (which I can't taste much of). I had a 3 lb. roast (twice the size the recipe calls for) and only did 6 chipotle peppers, 1 TBSP of adobo sauce, 3 limes, 2/3 C of honey, and 4 garlic cloves. I pureed all of it with my immersion blender. I'm going to use this in the Chipotle Copycat Burrito Bowl. Easy breezy and spicy spicy!
