  • 1/3 cup peanut butter (Reduced Fat, I use Skippy)
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce (I like the flavor of Tamari best)
  • 1 teaspoon fresh ginger (grated)
  • 1/2 cup sweet chili sauce (see note above!)
  • 1/2 cup chili paste (Sambal Oelek ground, see note above!)
  • 1/2 cup peanuts (chopped)

My husband and I loved this recipe. I will definitely be making this again. The ingredients all blended perfectly. My crockpot must have been running too hot because even on low at 6 hours is was almost burnt. I wonder if it could use a little more liquid or maybe I need a new crockpot. Definitely try this one!
