This dish turned out great! You really do have to limit the searing of the cod to 2 mins each side. I also suggest spicing the cod a bit so those flavors show up in the wine sauce. I also used a little more butter and a little more wine. Lastly, I used the whole habanero.

It was a lite meal but it didn't turn out the way I envisioned. The fish was crumbly. I was looking for solid pieces but it didn't make it through the pan searing session. The dish was also lite on flavor as well.
